Ingredients

  • 1 cup salted butter, softened

  • 2 teaspoons baking powder
  • 1/2 cup salted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 1/2 teaspoon almond extract (for frosting)
  • 2 tablespoons milk
  • Pink food coloring (optional)


Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet.
  2. In a stand mixer, cream together the softened butter and granulated sugar on medium-high speed until light and fluffy.
  3. Add the eggs, vanilla extract, and almond extract, mixing until the dough is smooth.
  4. Slowly incorporate the all-purpose flour and baking powder on low speed until just combined.
  5. Use a large cookie scoop to portion the dough, place on the baking sheet, and gently flatten each ball with your palm into a thick disk.
  6. Bake for 11 to 13 minutes until the centers are puffed and no longer glossy.
